1. When the process of fermentation of cereal grains or corns is completed and at the time of distillation process in which alcohol is generated should be 80% only .When it is put into barrels for maturation then there should be 62.5 % alcohol percentage should be there.
2. The maturation of whiskey should be in fresh charred white oak barrel for 2 years and above
3. After maturation no thing should be added to it like flavouring agents or colouring agents which are added by scotch , Canadian , Indian and Japanese whiskey producers. only chill filtration and water addition is exempted. 80% of alcohol volume by volume is converted into 40 % volume by volume but in Jim beam bourbon whiskey its 42.8% alcohol volume by volume .
